试验研究了从山楂果实中提取果胶的工艺。采用正交试验设计筛选山楂果胶萃取的工艺参数。利用超滤法浓缩果胶,超滤清汁得到了合理使用。通过研究果胶甲酯酶的活性,确定了高甲氧基果胶转变为低甲氧基果胶的适宜温度条件,提出两条果胶提取工艺路线。 |

The processing technique in extracting pectin from haw was studied.The parameters of ex- traction of haw pectin were selected by orthogonal experiment.By the observation of the activity of the pectin methyleasterase,the proper temperature which HMP changed into LMP was established. |
